Quick Quiche – Totally Yum

I have recently fallen in love with quiches. A couple of weeks ago I found the following link on a buzfeed.com post about things you can cook in a coffee cup. I tried it out and it turned out great. Plus add in the joy of making something yummy in under 3 minutes and you can be the happiest non-cook cook ever!

However, when I tried the recipe out I made a few minor changes. Due to the my recent fitness craze I made the following adjustments to the original recipe:

1 egg

1 1/2 tablespoons milk 

Salt

Ground black pepper

1/4 of a bagel (or similar amount of French bread, etc.)

I used half a slice of bran bread instead. It might not be as yummy as using a bagel or french bread but I don’t allow myself to have wheat in other form than as cereal or bran bread. So maybe you can try different breads out and let me know how it turned out.

2 teaspoons cream cheese

I used a tablespoon of Lebanese low fat cream cheese here. I plan to use cottage cheese next.

1/2 slice prosciutto or ham

This is where I’ve been creative. So far I’ve used pieces of mortadella slices, different types of kebabs, hunter beef/chicken, mushroom or pieces of vegetable for a vegetarian version of the quiche.

Fresh thyme leaves or fresh chopped chives

Dijon mustard

(This I’ve so far excluded because I don’t like mustard but if you do go ahead and let me know how it goes with the dish)
I used chilli garlic sauce instead.

The website version has around 200 calories. Mine should have fewer. Hopefully.
